summer is good for eating. tobes and i have vowed to eat out less and it has motivated me to experiment with all kinds of things. i made the most delicious homemade hummus, which i'm quite excited about because i've never felt that i could make a homemade version that was as good as some store bought brands. now i've made one that's, dare i say it ( Read more... )

Amazing! I also made my first homemade hummus this week in years. In addition I made tempeh salad, potato salad, pasta salad with zucchini & mushrooms and sauteed onions and garlic.....it has been a summer feast, and it has been delicious. Tonight I am making stir fry.I love cooking when I love cooking,

ooo. that sounds like a delicious selection. happily, i am just returning to tempeh after years of avoiding it and am pleased. we should cook together! come to davis and take advantage of our csa please.

Maybe I should move to a warmer climate for my ph.d. In Montana, the only locally grown produce available right now are radishes, spinach, teeny tiny white onions, teeny tiny carrots, and sour strawberries. There is only so much one can do with that kind of selection.

that sounds so much like when i lived in michigan. i had no idea that sprouts were supposed to be white and sort of crispy until i moved here. plus the growing season here is just so much longer. we're going to be getting fresh produce all except two weeks out of the year. there are definitely benefits to other locations, but california has everyone beat on produce.

Wow, that menu sounds wonderful! I love summer squash on pizza.

I've been thinking about a vegan substitute for the buttermilk in that plum upside-down cake recipe I sent you, and it occurred to me that I almost never bother using real buttermilk in anything. Instead I just add lemon juice to ordinary milk to replicate the tanginess of buttermilk. So maybe if you have something that you usually use in place of milk, you could try just adding some lemon juice to it. I usually use about a tbs. of lemon juice to a cup of milk. I hope that's helpful!

oh interesting. i actually found one that's somewhat similar, which is that you add a teaspoon of apple cider vinegar to soy milk and let it curdle a little. i'm going to try the lemon juice though - that might be better for sweeter recipes. thanks!

the pizza came out great. i didn't know before that i loved summer squash on pizza but now i do.

I've never really used soy milk, but if vinegar will make it curdle and thicken, I bet lemon juice will too. That sounds like it will work well.

One of my favorite combos on pizza is summer squash, caramelized onions, and roasted red pepper--give it a try some time.
