I got all the recipes redacted yesterday.  Now I just have to test them all.

I had to change my choices in the German and English sources because I could not wrap my brain around ways to make them work -- one with vinegar but no emulsifiers and one with bread crumbs but no sweetener.  I may try them anyway, just to see what happens.

How are you going to present it? How are the judges going to serve themselves?

I haven't put excessive thought into that part of it yet, I must admit. I might make a run over to OTP for bowls of different colors. Not necessarily period, but attractively eye-catching. I'm also thinking Dixie cups and those little ice cream sampler spoons for individual service. =)

I do know that each recipe will have its own placard with the original recipe and ingredients. The method and other details will be in the documentation.
