Eggplant parm is good and easy to make. Even better if you use fresh mozzarella.

I actually wound up making little impromptu servings of eggplant parm once I realized how oversalted my slices were--I happened to have some mozzarella in the fridge, so I warmed up some sauce and made a few little stacks of eggplant. I think next time I'll try planning ahead for that.
