I made chili last night for date night with Dannie. I used a recipe I made once that was the best chili I'd ever made in my life, but with one major change: I didn't use Ro-Tel canned chilis and tomatoes because I had heard that the canned tomatoes leech poison out of the cans. perhaps use fresh tomatoes and chilis, but soak them in something before hand, sorta the way the ro-tel chilis basically sit in their own juices in the can?

That possibility did occur to me. If I do that, there will be cider vinegar involved, I'm just not sure how yet.

yeah I was gonna say that there is a lot of salt and a sort of brine that's in those rotel cans. Sorry yer chili didn't turn out the way you thought. But I do think salsa is a great idea!

I know you guys have been keeping up with my chili recipes, so I'll keep everyone updated on what I learn. I wish I were going to be able to make Merukon this year, so I could cook for everyone.

perhaps a bit of tomato paste in addition to the fresh tomatoes for depth of flavor?

Also could work. I do love the tomato flavor. I would also consider using bloody mary mix, which I love to drink.
