For the "what do you do"...you roll with it and adjust as best you can. Or you find somebody else to do it. One of the best pieces of advice I've ever heard about throwing a wedding is to remember that some thing not going perfectly does not mean it's all ruined--that got me through much of what I could have freaked out about.
We held ours without buying into 95% of the bullshit that the wedding-industrial complex and culture wants people to get wrapped up in. Take deep breaths, go for rides when you can, and do the best you can to only make choices that benefit the two of you and the party you want to have. Other people's hangups about this are not your problem. It'll be awesome 'cause it's you (and I can't wait to see photos). :)

Changed the terms? Weird insurance? That's sucky. If you can, go with another vendor. Again, it's your money, you should get what you want. We had fire dancing at our wedding and because we had the fire dancing outside we didn't need to get permits or insurance or anything. Also, we couldn't have amplified music outside, so we sang the bunnyhop while the dancer performed. (Alternately, mariachi bands, string quartets, heck, even a marching band would have been allowed- as long as they weren't amplified. Crazy.)
Again, if they want your money, they need to earn it. There are plenty of vendors willing to play along with you that you don't need to be stuck with someone who isn't willing to put some effort into it for you.
