So I've been baking cupcakes from scratch for the past two or three weeks.  I have found a recipe that I like a lot and I have tinkered with it to make it taste just right.  My only issue now is that I can't make the cupcakes rise up and make that little dome on top.  All of mine are completely flat.  :(

What am I doing wrong?  I tried adding ( Read more... )

Not all recipes rise like that. The majority of the ones I make don't rise into perfect domes... but when they're covered with icing you can't tell ;)

Ah, I see. Thanks. I was worried that I was doing something wrong.

What kind of recipe do you use for your icing? I have tried three different "whipped" recipes but they are all coming out runny. I've even used less wet ingredients than the recipe calls for.

I use the fluffy vegan buttercream recipe from Vegan Cupcakes Take Over the World for most of mine. If I want a different flavor, I just tweak it however I wanted... like when I want strawberry, I just make the plain icing and then add in pureed strawberry & enough extra powdered sugar to thicken it back up, or something like that. But that's my usual "go to" icing because it tastes really good and stands up really well.
