I just made vegan hungarian goulash, and it turned out really good. It's a huge pot, too. It should last me a few days. I am going to serve it over gnocci, instead of the traditional egg noodles

Vegan curries = super easy. Just don't forget to stock up on the coconut milk :) I made one by accident not too long ago, and my meat-eating roomies didn't even notice.
