Sun Choke Fritters

6-8 good sized sun chokes grated and soaked in mildly salty water over night in a glass, non-reactive dish

Same amount of grated parmesan cheese

3 eggs scrambled

¾ C of Gluten Free bread crumbs or smashed crackers

salt & pepper to taste

Pineapple stand up chicken

1 can of pop, empty and clean
1 C of pineapple juice
1 papya or mango cut in thick slices
3 thick slices of ginger, chopped so they will fit in the can
1 roasting chicken

Smack & Cheese

6 C uncooked GF pasta (or there abouts)
3 C shredded cheese of your choice
3 C milk
1 chopped onion
1 C chopped turkey ham
1 C chopped chicken leftovers
2 TBS olive oil
salt & pepper to taste

Basic Rib Roast

2-4 # roast
kosher salt
2 dozen crimini mushrooms chopped medium
1 stick of butter
1C Sherry

put the roast in a deep dish baking pan with the fat side up
pour a layer of salt on it
