Back in the day there was a story put out that there was a third trilogy, which was to take up from the end of Return of the Jedi. That was never more than a rumor. Lucas sometimes mentioned that he had the whole thing worked out, but he hadn't actually written anything, even in outline form.

As evidenced by the atrocious writing of parts 1-3, it's pretty clear that if he had thought out the whole story, he wouldn't have had so many plot holes that had to be filled by absurd contrivances. The whole of episode 3 was engineered to fill those holes, with varying degrees of success.

In addition to what TrueGaudior said, there was a set of three books written by Timothy Zahn that chronicle what happens after the original trilogy. It's kind of the "unofficial" third part of the story, and it's damn good. :)

I've never read those, but I do remember a trilogy about the adventures of Han Solo and Chewbaca. The last line of the last chpater was something about Solo telling Chewi that he had heard Jabba the Hutt had work for smugglers. :-) It was pretty bad. Very Juvenile.
