You need a big tapestry needle and about 18" of the yarn to sew the heel together. Fold the heel in half vertically (wrongside out) and sew the two edges together. Don't knot anything, just leave the tails of the cut yarn hanging out until later.
The yarn I bought wasn't enough to get but a few rows past this point, so I've ordered one more skein.

My mother in law knitted me some fabulous socks. I love them! Not enough to knit though. I don't like it. I'm glad that you are having a good time with it.
Well, I did not use the gray yarn provided. I bought my own, so I can't say how the other works out. You can always try an alternate color for the heel and toe, and take the chance that the toe color may extend half way up the foot.
"My" yarn comes in 3.5 oz skeins, and is 220 yards long. One skein gets me past the heel, but not by very much. And I suspect your legs are longer than mine.

but not really. Too many stitches to choose from. And wouldn't it be better to bind them off together? (I have a book on knitting ;-) Or would that create too much of a seam?

Don't pierce the the yarn if you can help it, because that weakens the piece.
