I love the mornings

When the dew is so thick on the fields it looks like a coat of water for as far as I can see and it smells so clean. Soon that will be frost and the first thing I'll do in the morning is to make sure the woodstove is filled. This is a beautiful post!

There are no black walnut trees around here, but there are plenty of pecan. Last year I must have picked up a ton of them. I even saved some for the squirrels in hopes they will leave the not-yet-ready ones to ripen.

We haven't turned the corner yet, either, but I can tell it's just around the corner. I've begun looking for good baking pumpkins for pumpkin pasta, roasted pumpkin and pumpkin bread. Nothin' says autumn like a good pumpkin!

You will have to share the recipe. I remember last year when you posted about the pecans. I wish I had a pecan tree!

Here you go:

1 lb box of bowtie pasta, prepared
1/2 cup milk
7 oz. cream cheese
1/4 cup shredded parmesan cheese
1 tsp olive oil

Melt over low heat until cream cheese is melted then add:

1 - 15 oz. can pumpkin puree (NOT pie filling)
pinch of salt
pinch of pepper
pinch of cayenne pepper
pinch of sage
pinch of nutmeg

Mix into cream cheese, add pasta and stir to coat.

Sooooooo simple! When I make it this year, I'm going to roast the pumpkin and throw it in the food processor along with a little garlic. :)
