Something that irritates me to no end

So I watch Paula Deen's "cheese" show and decide that I'm going to make the cheese straws and artichoke dip. I look up the recipe and it is COMPLETELY different from the one she used on the show. this is why I just kinda wing it.

last night I whipped up a pasta dish of sauted eggplant cubes, bowtie pasta, garden peas, diced tomatos, herbs, parmasean cheese and olive oil.
Whoa momma, it was awesome.
I had to fight off the dispatcher for my lunch because she snuck a peek and snuck a few bites. Hah! I had to promise to whip her up a bowl of it when she comes by tommorow to help me with my garden.

awesome...how do you do your eggplant cubes? Floured or no?

I soak em for about 10 minutes in a little seasoned buttermilk, then shake em off, roll em in flour, then into a beaten egg, then panko bread crumbs. :D

I made an improvement to the recipe since I went to the local fish monger and got some kick ass fresh sardines. Grill the sardines with olive oil and salt, flake the fish right in and you have something Ceasar would knife Brutus for. ;)

I will have to try that, I'll bet the dredging keeps them from soaking up too much oil...I'm going to look for an eggplant tomorrow. Thanks for the tip!
