bored with my meals, advice?

Hey, anyone want to exchange grad-life friendly recipes?  (i.e., easy, inexpensive, not requiring a well-stocked kitchen, and/or fast?)   Bonus points for recipes that are perfect for those late night writing sessions, when you desperately need a snack but your brain has turned to mush ( Read more... )

I make myself wraps in tortillas and fill them with sliced turkey or cut-up meatballs (made in crockpot earlier in the week), bean sprouts and cucumber + dressing of your choice. I got tired of paying $5.75 for a wrap, so to make it more fun, I pick different colour/type of tortilla. Also, I realized my favourite part of the wrap was the peanut sauce, so I'm still looking for a healthy one at the store...

Right now, I am about to make a quick and easy frittata/egg dish by throwing in broccoli and streaming green beans on the side. Another good piece of advice I've read is making a small pot of beans in the slow cooker and using them up throughout the week, though I have not got to the point of using up all the beans, as I can get tired of them pretty quickly.

I heard egg fried rice and the type can be an option too. Cook up a pot of rice ahead of time and throw in any additions into the skillet -- peas, eggs, canned beans, corn, etc.

Also, bean salad: 3 kinds of canned (or not) beans + cut up peppers + vinegar + sugar. You can use it in a variety of ways during a few days.

Cook some pasta. Toss it in olive oil, salt and pepper. Add in capers, olives and sliced pimento. Add cheese if you like.

If you have a toaster oven, pizza bagels are super fast, the ingredients are inexpensive to have on hand and they only take about 5 min to make. Otherwise you could do the same with a boboli pizza shell (or to save some money you could use the cans of pizza dough in the refrigerator section).

Also, if you have a toaster oven you can make just a few of those instant cookies that come in the refrigerator section at a time.

Stews are also great. Make a bunch in advance then stick the rest in the fridge in single serving containers. And you can study/write while the stew is stewing.

I was going to suggest pasta too...you could put anything on top of pasta. I like it with shrimp, but on those cheap days I use chicken, and throw some alfredo sauce and steamed broccoli and you're good to go!

Eating Well has an enormous number of recipes on their website and a lot of them are pretty cheap/easily splitable. So I recommend browsing around a little, especially if you don't mind vegetarian meal ideas (they're vegetarian recipes are particularly good). I am currently wild about their skillet gnocchi, their sweet potato chili, and their edamame stew. For snacks, well, peanut butter pretzel truffles?

*make pasta (whole wheat is healthier), saute onions in olive oil on medium-low for like 15 minutes,when it gets glassy add in a handful of shredded mozerella, mix with pasta ( ... )

My super quick meal is to cook the SmartTaste angel hair pasta (~5 min to al dente) and cook some frozen spinach in the microwave in the bowl I'll be eating in while that's cooking. I add a bit of salt, garlic powder, olive oil, and a touch of the Asian chili-garlic sauce and mix it all together with the pasta. It's less than 10 min start to finish and less than a buck to make :)
