Count me another person who doesn't use much TVP. I do a lot of veggie curries, or Mexican food with beans (you can put pretty much anything in an enchilada). Chickpeas are really good for making things tasty and filling.
I made grilled japanese eggplant with goat cheese, basil and pistachios the other day. It was really yummy. I have reduced my meat intake a lot but that's normal for me in the summer time.
