I finally decided to hack my iPhone specifically so I could load a video recording app on it and I'm please to say, the results are better than expected. Not the typical digital camera quality, but certainly at least webcam quality

Cycorder, available through Cydia. To get the files off, you need to load either SSH or Netatalk. I use Macfuse and the SSHFS app to mount the /var/mobile/Media/Videos dir of the iPhone, then drag-n-drop to your desktop.

If you're running WRT54G/GS/GL, using the DD-WRT firmware will allow you to set a static DHCP addy for the iPhone MAC as well as DNS for it (and all your other systems) so you can mount the iPhone by name. This works really well for me.
