Fun fact: when preparing steaks or other solid hunks of meat, the nasty pathogens that may be present are going to be on the OUTSIDE. If you heat up the outside sufficiently, the inside can be nice and rare and juicy.

Restaurants still put disclaimers about eating rare meat to cover their asses, but it's very unlikely that you'll pick up something from a rare steak. Burgers and other items using ground beef are where you might get into problems, since anything that might have been on the outside is now all mixed in. I usually eat my burgers medium and my steaks medium rare XD
