Fish Sauce.

Growing up in Bangkok Thailand gave me a lot of exposure to lots of different customs and cuisine.  In Thailand they use Fish sauce like we use salt here and the Chinese use Soy Sauce.  Though Fish Sauce (Nam Pla in Thai or Nuoc Mam in Vietnamese) tastes nothing like soy sauce.   When we moved back to the USA in 1972, we brought our last bottle of ( Read more... )

I know that feeling. I am jealous of yours though b/c it can be purchased. My flavor from childhood is my Grandmother's fig preserves. She passed away 5 yrs ago this Christmas and took her secret with her. Dammit all. ;-)

Yeah, I thought I would never taste that flavor (they call it Umi which is a natural flavor enhancer whereas MSG is not "natural") ever again when that bottle ran out in 1973. It was in the early 90's when I found a bottle of half assed fish sauce. I was ecstatic to have found it even though it was a shitty as hell brand (squid brand). Then I found Tiparos about 8 years back and it was much better. Last year I found Golden Boy brand - that was the brand we had in Thailand and the bottle of stuff that we brought back to the U.S. way back in 1972. 35 years I had to wait in order to get that condiment again. I found it in an Asian warehouse out in Norcross which is a hell of a drive from West Cobb. I bought 3 bottles which was all they had. When those finally ran out after a year, I ordered the dozen bottles online. It will be a LONG time before I run out of it again ( ... )

That sauce sounds divine as well. Maybe I could coerce you into parting with a nip of it for me to try? I'm always up for new flavors.

Yeah. Mutt's fig preserves were just amazing. She even grew her own figs for it. Just damn good stuff. She did something to it and none of us could figure out what it was. My egg donor tried to duplicate it but it wasn't the same. My great aunts tried as well to no avail. She wouldn't tell us either. Hehe Like I needed one more reason to miss her?

I can give you some, though I'll need to put it in an airtight container. It is made from fish, but it doesn't stink like fish. But if you leave it out and open, it can start to get a fishy smell.

If you love eating Thai food, then you have tasted this sauce probably without knowing it. Thai restaurants use it to cook just about everything. You use it in place of soy sauce. Like if you were eating fried rice, you'd use a couple of squirts of it and you will notice a difference in flavor right away.

I can;t do without this stuff ever again. I use it on steaks too. 4 tablespoons of fish sauce, 1/2 teaspoon of lime juice, chop up 6 hot Thai chili peppers (less if you don;t like spicy food), and 2 tablespoons of chopped cilantro. Mix that all up and spoon it over a steak instead of salt and pepper or steak sauce. It is awesome.
