One of my biggest pet peeves have become when I travel and business associates always recommend some Mexican restaurant in Washington D.C. or Stafford, VA. Really, I live in San Antonio, TX. I don't want to eat your crappy version of Mexican food. :)
Although many would argue that you can't get decent Mexican food north of Dallas, I KNOW that it's night impossible to find north of the Mason-Dixon line. There is no chance it's going to overtake pizza up there.
I'm pretty sure I could eat Mexican 3 times a day or so. Couldn't do that with generic Italian food.

When I think of TexMex, I think of exactly what you described. It's a lot like Sonoran Mexican grub out here in Arizona. No fluf. Just the cake- no frosting. Heh. Sonoran Mex is pretty drab, but good I guess.
It wasn't until I came to Arizona from San Diego that I noticed black beans. I don't like the black beans. BAH!
OK. In San Diego, it was Baja Mexican, of course. Even my grandma (my dad's side of the family is Mex) made "baja style" stuff. Anyway, those foods were light, lotsa fish and chicken with lettuce and cabbage, tomatoes too. I suppose even the menudo we made on New Years had a lighter baja stylee. Who knows.
Anyway, I see that you Texans prefer the "pre-made" cheapo, form created, taco shells. Heh. Us Baja junkees prefer the dip in hot oil and bend-your-own taco shells. Equally as heart busting and artery clogging.

I love living in Texas. I have Tex-Mex almost every Friday night. My work even has Quesadilla Friday in the dining room.
I have tried Mexican food places in other states, and it just doesn't cut it. It's hard to go wrong here.
