Gluten-free cake?

OK, I have two (2) employees who eat gluten-free diets. I have to make cake (or cupcakes?) next week for my staff and so I'm actively seeking successful recipes -- I'm talking you've actually TASTED these recipes and they didn't make your mouth twitch.

Anyone? Beuller?

IIRC, cupcakes will be more successful.

I'll ask in my LJ, I know a few people who eat gluten-free.

ETA: Are you just looking for gluten-free? It doesn't also have to be vegan, right?

If you don't want to buy the "I'll never use this again" ingredients that sometimes go into GF baking, apparently there is a Betty Crocker GF cake mix, that someone has successfully used as a base to make lemon-poppyseed and red velvet cupcakes.

Gluten-free is the only requirement that I'm aware of. We had GF brownies from a store earlier this month, so I'm assuming butter (etc.) was used in the making of those.

Usually with some type of sorbet or other fruity enhancement. (I didn't use this exact receipt but I can't find the one I used, but this one looks very similar although I used just rice flour.)

I'm a celiac.. I have a lot of recipes and have been diagnosed over 20 years. I also won the county fair in a non-gf torte category last year. :D What kind of cake would you like to make?

I'll offer several potentially contradictory requests. :)

I'd prefer not to buy too many "one time only" ingredients, although I don't mind having to buy some. These employees aren't going anywhere, and this will hardly be the last time I bake for them.

It would be lovely to make something they can't easily get from a store. I'm aware that you can just buy gluten-free brownies, for example -- if there are cakes that are easily found, I'd rather make something else.

I don't want something so challenging that I have to do a dry-run earlier in the week to make sure I can get it right.

I'm completely open in terms of flavor and type. :)
