Turkey Fried in Peanut oil
Pernil, pork butt slow cooked overnight in my oven. Two of these. This is the best stuff ever. I use some of the drippings to season the gravy. I poke holes all over the top of them and insert whole green olives and big pieces of crushed garlic cloves.

The recipe I linked to is the one I have been using for about a million years. It has a little sweetness and is perfect for everything. The main thing I do differently is add an extra egg for the one I make for the stuffing. I also heat up a cast iron skillet with a little oil in it before I put the batter in. It makes a sizzle and a really nice crust.
