I'd contemplated that, but I'm not sure I'd have the time to pre-make very many of them. Also, much of the personality of a rag doll comes from the choice of materials the doll is made from, and what you choose to accessorize it with. Using markers to color a blank, un-clothed doll rather pales in comparison.
We're actually already doing larger bead necklaces/bracelets, friendship bracelets, and plastic lacing. I'd considered doing seed beads, but the need for looms and sharp needles and the likelihood of spilling a ton of these things around the area made it seem like a poor idea. Macrame might work, tho. It's basically an extension of some of the friendship bracelet stuff. I'll do some reading and see what I can come up with. Thanks! :-)
Balto also suggested this. It's not exactly theme-appropriate, but it's definitely doable. I've got some books on it and can get access to inexpensive origami paper. My only concern is that I'm not stellar at this and I'm not sure how many folks will be self-starting. But I'll give it a go and see what happens.
Did I ever tell ya I attended an origami panel at the first furry-con I ever attended? I think it was Confurence back in '98. It worked out alright, and it was a nice diversion from the Sonic the Hedgehog bondage porn.
I can teach some crochet, and I have lots of leftover tidbits of yarn and a fair few spare hooks (they can keep the yarn but not the hooks). I'd have a reason to show off the Blanket of Doom. >.>

Regarding the hooks, have no fear. I'd intended the plastic ones to be take-away, so folks could ball up a length of yarn and take their work with them.
