i used to like opening the restaurant. walking through rows and rows of empty tables and chairs. i would scrub the tabletops and lay out cutlery and menus. pick up stray glasses from the night before and take them to the dishroom. i like manual work because it makes me feel human, & simple. the indian cooks would blast music from the kitchen. they
