Comfort food!
300g potato gnocchi
2 ham steaks
100g baby spinach, washed and drained
100g strong blue cheese, crumbled.
olive oil
toasted pine nuts
Roughly dice the ham steaks, then fry until brown and warmed through. Cover with foil, and set aside.
Cook and drain the gnocchi - reserve a half cup of the cooking water. Pat dry with paper towels. Heat 1 tbsp oil in a pan, and add the gnocchi. Cook over medium heat until the outside starts to crisp. Add the cheese, and enough of the cooking water to make a creamy sauce. Add the spinach, and cook until melted. Mix in the diced ham and pine nuts.
