My theory is that you're supposed to say Happy New Year's Eve (because the new year owns the eve, and stuff.) And then people get confused and think that there is more than one new year, hence the plural Happy New Yearssss.

I thought you spelled 'IDIOTS' wrong in your entry. Sadly, though, I was wrong.
