Yeah, it's the starch. My potatoes always turn a little pink if I don't put them in the pan right away. It's nothing to worry about though it's normal. And I agree with you from the last potato post; I'm still wondering if the rinsing makes a difference since I never do it? Perhaps it's the type of potato used? Since there are several kinds... hmm.
