I'm eating a piece of this for breakfast right now. I substituted 2/3 cup of the white sugar for brown sugar. I also cut the salt to 1 teaspoon and increased the cinnamon to 1 teaspoon. I accidentally only added 1 teaspoon of baking soda, but it turned out fine. My baking pans are not quite 9 by 5, but they were perfect size at 8ish by 4 ish. It
