Corny, corn, cornbread

From time to time I come across a really great recipe. I'll usually make it for friends, share it with my sister and Mother and then file it away to make at another time. And then there are recipes like this. Recipes that completely blow your mind and surpass all other recipes.

I <3 PW! I only recently discovered her - and then wondered how it had taken so long - but she's amazing. I've made several of her recipes and I'm always happy with them. It's hard for me, being diabetic, not to run and make all of her sweet things, though. I waaaaant.

She's fantastic.

BUT, her recipes are super fatty, so there are a lot of times I have to substitute skim milk for whole milk, etc. But, sometimes I don't. ;)

Oh, totally. I'm constantly modifying to make things healthier, whether it's her recipes or something else. I wish I could make things like her cinnamon rolls or all the variations, but there's just no way. I can't begin to imagine how much insulin I'd need for just one piece of something like that, much less how fattening it is. hehe It's harder to modify baked goods to be less fattening (though I so did with the banana bread).
