I don't know how familar you are with Magus Crowley's work, but he did something similar in teaching his students to learn to write with both hands... ie ...forcing the body to utilize parts of the brain/senses not commonly accessed.
In closing, I think by removing the ability to be mobile, in addition to removing sight, will force one to an extreme use of the other senses...
think of it as me teaching a lesson to myself.

where-as drinking a coke before hand was as simple as picking it and raising it to your lips, in either case you have no fucking arms... (hell, in the latter case you have no lips)
no experience is inherently negative (but then, you know this right?) just a unique experience to test strategies, patterns and theories...

It doesn't allow for the other senses to atune themselves to their new state of being soley depended on, which again, changes the original perception.
You already have the wheel chairs?

You're probably right about the attunement ...but I still think it's worth a try. If anything, I think it'll be an interesting experience..
