BUT I STILL THOUGHT OF YOU FONDLY. Coconut agave cookies could be delicious, but they would have to be a crunchy, light kind of cookie in order to carry the flavours well I think. Can't wait to see the recipe!

WE'LL SEE how they turn out. they're in the oven now. I kind of had to fiddle with the recipe because the agave nectar was more wet then the sugar that I was supposed to use. So ... hopefully they turn out decent ... I'll tell you the texture when I know ...

Yeah, that would be expected. If you cook them slowly rather than fast shouldn't that allow for the water in the nectar to evapourate? That's usually what I do when baking with honey; then again I've never used coconut flour so who knows what kind of variable that will be?

WELL, THEY'RE DONE. they're actually kind of soft. a little heavy, but nice and soft and kind of delicious. but hey, for like, three grams of fiber and a low glycemic index? I'm down.
