Callie announced last night that she is now a vegetarian. She no longer wants to eat meat. Dad said that since Callie and I are vegetarians, he will be one also. So now I will cook one meal a night rather than 2 or 3 different meals

Rennet, traditionally used as a coagulating agent in cheese making, is derived from the digestive juices of slaughtered calves. Rennet is like gelatin in the sense that it's a common food additive but the foods containing it are often considered vegetarian. Gelatin (US spelling) or gelatine (British spelling) (used to make Jell-o and other desserts) is made from the boiled bones, skins and tendons of animals. Yuck! ah man... i've been willingly ignorant about cheese.
it's gonna be REALLY hard to stop mozzarella, but I think there's some pretty good shredded flavored vegan tofu substitute that even melts on a pizza... of course, i'm not sure about the taste, but it'd be worth the try.
I've been considering going vegan as well. I don't drink milk anymore, and I don't eat eggs unless I break down and have the craving for French Toast...
