I have every confidence whatever you smoke will be tasty. How is smoked salmon different from lox? I believe lox is brined first, but I dunno of any other subtleties are involved.

PRELIMINARY research indicates that smoked salmon is a generic term, and there are other words that are more specific to the exact preparation, like the Jewish lox, or the Nordic gravlax. Wikipedia says lox is brined, but not specifically smoked. Nova salmon uses a milder brine, and IS smoked. Gravlax uses herbs.

So that's how broad and shallow (and potentially inaccurate) my minimal research has gone so far. But you're right. I'm pretty sure whatever I do will be tasty. I'm just not sure yet what specific direction I'll be going in.

Oh, I meant to say...you might even try rubbing some of it with the same spices as your ribs - I'll bet that would be good.

The only thing I've decided so far is that I will cook it, so it won't be like lox or Nova salmon. Should be able to use it in the same ways though.

Smoked salmon is heaven to me. Pity I don't know squat about smoking anything. It's sure cold enough here to cold smoke. But my propane grill won't get that cool, I reckon, even if I rigged up some kind of smoking gizmo. Congratulations on getting any level of success with that, being as pricey as it is.
