Glass noodles. Same things as rice vermicelli, yes? You use them in spring rolls? I made some the other day, both baked and not baked.

Hey dear! Glass noodles are actually a bit different than rice vermicelli. The glass noodles are the same thing as the "bean thread" noodles that are made with mung bean flour and not rice flour. I like it because it's easy to prepare (you just soak them in recently boiled water for about five minutes, then rinse and drain) and it has a crunchy, sappier texture than rice vermicelli. You can probably try them in spring rolls if you fry or bake the spring rolls because the noodles soften up more, but I think using rice vermicelli is probably better for the fresh rolls because the glass noodles tend to be very very chewy in a cold/fresh roll.

Oh I see how it is, you're putting me to work even before the wedding night! D:

And haha, even though I'm not 100% vegan I would totally do a vegan wedding feast just because it would be MY DAY and everyone else would have to suffer for me. It's all about ME. Oh, and the other groom, of course. XD
