That sounds yummy! Thanks for the idea. I love salmon and don't cook it often enough. We have a fancy oil and vinegar store in town; I need to remember to experiment with other oils. I have some pumpkin oil that is delicious that I never, ever use - it's criminal!
My favorite way to do salmon is to put a fillet over cooked rice spritzed with olive oil, spritz the salmon, and then cover it in lemon pepper, dried rosemary, and Penzey's chesapeake bay seasoning, then sprinkle it with a little sliced almond. 10-15 minutes at 450 and it's great.
