The use of they is correct, if it went "A man walked into a bar and asked why 'it' didnt sell any beer" it would kind of wreck the punchline, then again the punchline kind of wrecks itself.

My point was that it's funny because the pun doesn't work like a pun is supposed to work in that usually the first line of the joke would be able to be interpreted in two ways,..but it's not...
