HEY SO I HEARD YOU GUYS LIKE COOKIES.
I know all y'all jealous of my baking skills.
Here's the recipe for the giant, hand-sized chocolate-chocolate chip Starfleet insignias! (Adapted from
mithrigil's recipe.)
Cookies:
4 tablespoons of unsalted butter (1 half stick)
4 ounces of cream cheese or Neufchatel
1 1/4 cups white granulated sugar
1 tablespoon dark corn syrup
1 large egg
1 teaspoon vanilla extract
1/2 cup unsweetened dark cocoa powder
1 teaspoon salt
2 teaspoons baking powder
2 tablespoons milk
1 3/4 cups flour
1 (11 oz.) package dark chocolate chips
Filling:
1/2 pint red raspberries
1/2 pint blackberries
zested rind of 1 lemon
¾ cup white sugar
Directions:
+ Preheat oven to 350 degrees.
+ Mix your filling together by combining all ingredients, then stick it in the fridge while you make everything else.
+ Soften the butter and cream cheese, then cream them together with the sugar.
+ Add the cocoa powder, salt, baking powder, milk, and flour, then stir until uniform. (I would recommend an electric mixer for this bit, because the dough gets very hard to stir. Don't do what I did and end up stirring by hand. You will hate yourself after 15 minutes of stirring.)
+ Fold in the package of chocolate chips, then remove your filling from the fridge.
+ Flatten cookie dough into a thick rectangle approximately the size of your palm (seriously, y'all, they will end up the size of your hand; they are supposed to be giant), then make a divot in the middle of the dough with your thumb for the filling.
+ Put a berry or two in the middle of the dough, then fold the edges of the dough until you make something roughly insignia-shaped.
+ Cover the filling with dough, then adjust your cookie's shape until it's the way you want it.
+ Bake on greased cookie sheet for 30 minutes at 350 degrees.
Makes approximately ten RIDICULOUSLY GIANT cookies.
