Anyone that tells you that you must have a 1-page resume is from the days of paper resumes and is probably not at all up-to-date on recent practices. The fact is it doesn't matter how long your resume is (within reason). It's possible that no one will ever even print out a hard copy of it. Keep it relevant, succinct, and talk about what you've done and you're fine.
I think it should be one page, just because whenever I help with hiring practices, two pages automatically equals TL;DR.
I think it also depends on the industry, though. If you're being hired for something really technical and you have the work history and experience to back it up, it needs to be included. If you're getting hired for retail, they don't care how many retail positions you've had just that you've had some.
If it isn't skimable, printed or on the computer screen, it's too long.
