Pie!

Polkdot pie is especially pieriffic. Have you baked much with vegan shortening? (coconut oil) How does it compare with margarine? I need to learn to provide my own pie.

Re binder: ahhh, yes, it might not do much/anything for that cup size. Long line binders also streamline silhouette curves, but I don't recall that being a particular issue for you, either. Have fun with your new haircut. :)

Re: Coconut oil... No, I've not used it much in baking but I have consumed much made with it. I've used it in raw recipes, but never in others. I'm sure it would work fine . That being said, I'd check out the Baby Cakes vegan cupcake cookbook, as it has a lot of recipes that include it. I've not made them, though, because the recipes include things like xanthan gum and until I'm employed again I will make pies with discount fruits.

re binder: Yeah... not sure what I was thinking when I bought it. Then again, I wouldn't know until after the fact that a regular ol' sports bra would do what I needed or what I could get. It's all about testing and a sense of humor.

I might need to buy that book. For scientific purposes only, you know. I've done some cooking with coconut oil but I don't have the knack of fat/starch/moisture that makes biscuits - and pie crusts - happen. I guess it's a matter of technique and not so much my ingredients.

Yeah, some of these things only become clear in hindsight. Still a worthwhile experiment I suppose, and now you've got one just in case. In case you eat too much pie, that is. ;)

For biscuits: Warm shortening. For pie, ice cold.

I'm going to give the coconut oil a try next time I get paid and I'll let you know.
