This is my staple food:

Pasta
Tomato
Red Pepper (damn, what do you call them? Capsicum?)
Half an onion
Half a courgette (um... zucchini - optional)
Garlic, crushed
Cheese

Grill the tomato, red pepper (in two halves), half onion and courgette until the skin of the pepper goes black. Take the skin off. Cut into bits. Cook the pasta, add squares of cheese and the bits of vegetables and the garlic and heat through until the cheese begins to melt.

excellent. red bell peppers are what we call them, too. it must just be Australia that calls them capsicums :)

Veggie curry is good. Peppers, Onions, Potatoes, Carrots, Zucchini, with a tin of chick peas, tin of tomatoes, a chilli and a spoonful of some sort of curry-paste mixture (unless you happen to have curry powder, cumin and coriander around, in which case a teaspoon of each works, but a jar of curry paste is the easy option). Fry the veggies, and then add the tins and the paste and cook until everything's cooked through.

black bean soup

a couple tablespoons olive oil
sliced yellow onion
vegetable broth cubes
black beans
lima beans

Sautee the onion in olive oil until clear. Add water and however many veg. broth cubes you need. Bring to a boil, then add the black beans (they will cook faster if you soak them overnight first, but you don't have to). Add the lima beans (you can soak them first too) when the black beans are about half finished cooking. It'll take more than an hour to make, maybe two, but you can make a lot of it at once and freeze the rest in small containers.
