Nah, that's normal baby KSB behaviour. They climb all over checking everything out. The head poking out of the aspen? Completely natural. That's how they wait for food and ambush prey. :)
In my experience adults tend to not be quite as active or bold as often as they were as babies, though they can still be seen from time to time just strolling around the tank.
That's how mine was when I first got her but she settled down after a while. She does tend to peak out of the substrate, though, especially when it's close to feeding day :).
Re: food-- go bigger. Our KSB and the Roughies will ignore something they don't consider big enough. If she doesn't want hoppers, try going up a size. Although, since they're lizard and rodent eaters, soaking it in broth is probably not necessary and may actually make her reject it.
