One of my favorites is meatloaf, it's pretty cheap, super-easy, and good for leftovers too. I probably make it once a week, and I don't follow a recipe, but I'll estimate it for you

- Veggie enchiladas...stuff to fill them with includes cheese, mushroom, spinach or pepper...get the canned enchilada sauce...takes about 15 min to prep, about 45 min to bake. Good for leftovers, too.
- Veggie Burgurs with cheese on whole wheat buns, lettuce, tomato and onion, served with sweet potato fries (buy them frozen.)
I use Ground Turkey as the meat in our tacos. Just brown the meat and mix it with water and either one packaged taco mix or make your own mix (just google taco seasoning recipes and you'll find tons of easy ones). Roll up meat in a tortilla (you can use whole wheat ones too if you want) with shredded cheese, taco sauce or salsa, shredded lettuce, sour cream, and whatever else you like. I usually make them into quesadillas for the kids since those are easier for little hands/mouths to eat.
