I asked Pete to be home by 6:30 to help with the dinner party for *his* friends. . . I gave him 2 tasks (this is after I spent an hour grocery shopping and 3 hours of food prep on Wednesday, and still had to fix the rest of dinner on Thursday). The Appetizers: various relishes, cheese (goat, brie, fontina) and crackers, shrimp cocktail (I did easy appetizers since I wasn't sure how many people would actually come before the 7:30 dinnertime).

The Salad: Mixed greens with lemon-oregano vinagrette, tart apples, walnuts, and a sprinkling of parmesan.

The Meal: Baked Rigatoni and Vegetables (eggplant, roasted pepper, and a yummy tomato sauce with onions, garlic, red wine, roasted tomatoes), Tuscan white beans and chard, green bean/mushroom/tomato casserole, Insalata Caprese (tomatoes, buffalo mozzerella, basil, oil, pepper), Several kinds of bread.

The Dessert: Parfaits of pears, mixed berries, and marscapone.

Well, there were two "no fish" people and I don't cook meat (well, I'll make an exception for my father-in-law at Christmas, but that's it). . . so I needed to do a not-too-weird vegetarian menu. . . Italian's generally safe with a group, and included the bean dish and the cheese for protein.
