I found a recipe for chicken and rice casserole with the Sunday paper coupon inserts last week, so today I went shopping, played with the ingredients and amounts, and rarity of rarities, produced something that other people might actually eat. So, I'm
posting the recipe I ended up using.
3 c cooked rice
about 1 lb chicken breast, diced and cooked
1/2 red onion, diced
1 yellow squash, chopped
1 can fat free evaporated milk
2 c shredded mozzarella cheese
2 eggs, lightly beaten
2 tbsp butter (I used SmartBalance Light)
Extra mozzarella for topping
Preheat oven to 350F. Combine all ingredients in large mixing bowl. Grease a 9"x12" (or slightly smaller) casserole dish (I used Promise Healthy Heart spread) and pour in ingredients. Sprinkle generously with shredded mozzarella on top. Bake for about 50 minutes.
Yay for having something other than canned lentil soup to take for lunch tomorrow!
