From the earlier periods, starting back around three- or four-hundred and running, well, right up until the popularization of modern refrigeration, the people of Iceland would keep huge vats of whey from when they turned milk into cheese, and would use this whey to pickle vegetables and fish, and even the yeast-like layer from the top to create a substitute for ale when grain crops were thin.
