been baking up a storm lately! yay, fun! here are a few items i've made these past few days...let me know if you'ld like the recipes and i just might find it in my heart to type 'em up for ye.

also!!!!!!! make this!!!! it is kinda like a sweet chutney. it would be great to top a baked brie round with and serve with some crackers for holiday entertaining! it is also nice in curries

Sweet Onion Jam

INGREDIENTS:
2 pounds sweet onions
3 tablespoons unsalted butter
2/3 cup packed light brown sugar
1/2 cup dark corn syrup
4 tablespoons balsamic vinegar
1/3 cup dry red wine (i only had white, it turned out just fine)
dash salt

PREPARATION:
Peel onions; cut in half lengthwise then slice thinly.
Melt butter in a large skillet or saucepan; add sliced onions and cook, covered, over medium-low heat until tender and translucent. Stir frequently.

Combine the remaining ingredients; add to the sliced onions and stir to blend. Bring to a boil. Reduce heat to low and simmer for about 40 minutes, or until syrupy. The syrup should coat the back of a spoon. Pour into a bowl and cool to room temperature.

Keep refrigerated for 4 to 5 days. Freeze in small amounts for later use.

p.s. speaking of thinking about one another...tonight i saw gil mantera at southgate and kept wishing the whole time how much i wanted you to be there with me!!!!!! it was amazing per usual :) i love them...and you!

you're welcome :) yea the best thing about being back home and not up at school anymore is i finally have time to bake! and a kitchen bigger than my thumb!

heyy do you think you could use fresh cranberries instead of the dried? ive never cooked with fresh cranberries before..but my mom has like 5 bags of them in the fridge...

hmm i think you probably could, you will most likely need to increase the amount of sugar in the muffins though, because the dried ones are already sweetened. and maybe need a few more cranberries too if they seem a bit sparse in the batter :)

oooh it'll be interesting if you do use fresh to see how they turn out!
