Hiccups are when your diaphragm goes into spasms of contractions. Singers who have good control of their diaphragms can often just do some breathing or singing and get them to go away on the spot. This is also why holding your breath sometimes works - in refraining from breathing you can sometimes control your diaphragm. (But most people have poor diaphragm control so they don't actually manage to get rid of them that way.)
Maybe getting him to imitate you with a singing or blowing type thing before he goes to sleep will help him get better control of his diaphragm so that hiccups don't happen. Like maybe singing a lullaby and encouraging him to make noise with you. He's probably too young for that to work (I know nothing about babies and the ages at which they can or can't do something) but it might be worth a try.
