lard is cow fat. you can use vegetable oil, i have. it tends to make the outside a bit crispier, but should still be soft inside. are you able to buy vegetable shortening? it is often known as crisco in the states. this is a great substitute for lard.
your problem could be because of a couple things. 1. what did you use as leavening? baking soda? baking powder? if you left them out or substituted one it might come out hard. also if you used too much. 2. if you kneeded the dought too much it would come out hard. let me know more and i'll see what i can do.

yes, we're moved (but i still have boxes to go through). nicky is super busy, that is why we don't hear from her much now. i'm trying to get breakfast with her tomorrow, but she hasn't called back :P
