What is the shelf life of unopened hot sauce? I have a ton of it and I know SOME is at least 4 or 5 years old. Is it still good?

I have some opened sauces that I have been using for ages. I don't know if they have open shelf lives, but I still use them. haha.

So any ideas?

I'm no expert on that but, the way I see it is that the unopened jars are still good. It's mostly vinegar anyway. So, I doubt it would spoil? I just see it like preserves. I think the same applies to the opened jars if they are in the fridge?

I've had sauces of various ages, but I'd say it depends on the sauce. I've noticed a disturbing drop in potency of sauces I've had for more than maybe 2 to 3 years.
