Full Metal Panic (high school comedy/romance mixed with giant robots) FLCL (surreal coming of age story about alien housekeepers. Trippy.) Durarara (I have NO IDEA how to describe this show, but it's great) Baccano (Train robberies in the 1920s) Diebuster (has robots) Noein (Time travel and superpowers. Trippy.) Trigun (Sci-fi western about the most dangerous man in the world)
Full Metal Panic, FLCL, Baccano and Trigun all have dubs of varying qualities, but it varies from decent to fucking perfect. Watch Baccano in english, watch the rest however you choose.

Macross Fronter (Giant robots and music IN SPAAAACE) Neon Genesis Evangelion (Definitely worth seeing at least once - if nothing else, watch Rebuild of Evangelion, which is shorter and prettier) Gundam Unicorn (Might like it, might not, but oh MAN do them robots look good; also Unicron jokes) Shin Mazinger Z (Skip episode 1 oh god, most ridiculously goofydumbawesome mecha show ever)
Does Gundam Unicorn require any significant portion of other-Gundam-context, or should I be good with what little I've picked up through fandom osmosis?
It might be kind of hard to tell what the different sides are in the final battle of the episode, but other than that it should be reasonably follow-able, especially in English! Just remember that even fans don't really know what the frack Cardeas is talking about because he's weird.
Other Getter Robo OVAs. There's Shin Getter Robo vs. Neo Getter Robo, which is only four episodes and falls well below New but somewhat above a sane giant robot show on the Gritometer. Highlights include http://www.youtube.com/watch?v=oT-5RFfvkAw and any other scenes in which Ryoma exhibits random superpowers on foot.
More interesting is Getter Robo Armageddon, which is pretty fucking dark but has an arguably less psychotic cast of good guys.
I could also regurgitate much of Eric's list, though if you decide to watch Diebuster you should maybe get Gunbuster out of the way first so it at least almost makes sense.
I must watch something other than mecha. I'm thinking, I'm thinking... maybe the Devil May Cry anime? It's not super great but it's got a memetically badass irresponsible indebted manchild who kills demons and has an annoying little girl sidekick. If any of those tropes appeal to you, go for it.
I haven't been watching much lately, so uh... I don't have much to suggest, but I may as well throw some stuff out
Batman: The Brave and the Bold is definitely more humor than drama, but when it is present, it's handled a lot better than one would expect from something that on the surface seems like it's just sort of goofy. There are some episodes that are sort of meh, but you can generally get away with skipping them without worry. I could go on about it more, but I'm feeling pretty tired, so it may be best if I waited until I was more on the ball.
I can't actually think of anything else right now, what with the tired, but if I do later I can post it then.
