I do something very similar, only my version involves a packet of Thai Kitchen rice noodles and their (MSG-free, real) seasoning, with Key lime juice, fresh cilantro, chicken broth, and fresh bean sprouts. Oh, and a bit of fresh hot pepper. The pepper I cook in the water for a while before adding the noodles, so that the heat disperses a bit.
I put the cilantro and bean sprouts in the bowl and pour the noodles & broth over them. By the time it's cool enough to eat, the sprouts and cilantro are as cooked as they need to be.
Love the stuff, but can't live on it because my system demands protein.
Ooh, that sounds delicious! I used to make something very similar indeed with chicken broth, and, indeed, when I have chicken broth I still do. I made a nice stock out of the Christmas turkey, and used that for a couple of days a week or so ago.
I love bean sprouts! If I'd had any I'd have included them. We call cilantro coriander over here, and I love it too :) In fact, I've just got back from town and I bought some while I was out, because I'm planning to make some more soup for dinner. Yum!
Basically, it sounds as though we have almost identical tastes in noodle soup *G*
As for the protein, I've just bought some tofu too. I do eat meat, but only free-range, and I'm trying to wean myself off it. Tofu's quite nice, though, I've found, in this sort of soup. Which reminds me that I meant to put it in a bowl with some soy sauce, garlic, hot pepper and other bits, to try to infuse a bit of taste into it. Must go and do that now!
This looks so incredibly yummy that my stomach is growling. Alas, even this is beyond my nonexistent culinary abilities. Can you send me a bowl over the Net? *drools*
Hey, you could *definitely* make that, if it looks yummy to you :) It's so incredibly easy! All you need to do is get in a few basic ingredients, and then you can make it at the drop of a hat!
In the meantime, though, I'm pouring a bit into the modem. Lemme know if it comes out safely at the other end :)
Tortilla soup, eh? *goes to look it up* Oh my goodness! I've just found a few recipes, and it sounds absolutely wonderful! Do you have avocado and/or cheese in yours? I'm absolutely *starving* now :)
Diced avocado and fresh tomato, almost always. Sometimes we sprinkle a little shredded cheese (Monterey Jack or one of those shredded-cheese blends) on top, but not every time. For some reason I usually prefer putting cheese in the leftover soup.
That sounds truly delicious. It's not something I've ever come across over here. Your description of it made me so hungry that I had to go and cook dinner *g* Finally eating now...
