Frittata or crustless quiche is even easier. I do a baked veggie one: chop veggies, put into quiche dish with butter and whack in oven. When they're done (usually about half an hour to 45min) mix up the eggs and milk with some herbs, pour over the top. Grate cheese over it. Bake in the oven for another 20 mins or so until done. Viola!

We regularly cook an egg and bacon pie (quiche minus cream). We add onion, sundried tomatoes, bacon, corn (basically anything we want to use up in the fridge) with egg and cheese on top, encrusted in puff pastry .... yum
